Smoked Salmon and Crayfish Starter

Large ring

Layer 1.           Smoked salmon
Layer 2.           Chopped avocado tossed in lemon juice
Layer 3            Crayfish tails or prawns

Build up each layer and then push out when ready to serve

 

Goat Cheese, Aubergine and tomato bake (If you don’t like Goat’s cheese, use Camembert or Brie!)

Large ring

Alternate layers of sliced goat cheese, aubergine slices and chopped tomatoes.  Finish with a top layer of cheese.  Transfer in the rings to the oven and bake for 30 minutes at 180 degrees c.  Push out and serve with a tossed salad.

 

 

Smoked Haddock bake  (or use your favourite fish!)

Large ring

Using the ring, cut the skinned smoked haddock into rings.  Using the remainder of the fish, chop into small pieces.  Place a layer of mashed potato in the bottom of the ring, follow with a layer of the chopped fish, a layer of cooked spinach, a fine layer of grated cheese and a final layer of mashed potato.  Transfer the filled rings into the oven and bake for 30 minutes at 180 degrees c.  5 minutes before removing from the oven, sear the fish rings for 3 minutes each side in a non stick pan.  Poach the same amount of eggs that you have filled rings.  Remove filled rings from the oven and carefully push the fish bake onto the serving plates.  Top with a fish ring and then a poached egg on the top!  Enjoy
